The Matten cheese dairy lies in the heart of the “LEK Reuss” biodiversity promotion area. Cheese is made here 365 days a year from milk produced by local cows. The milk complies with AOP directives, which stand for the highest quality standard. In addition to hard cheese specialties, which are mainly for export, Kari Schwyter makes superb Sbrinz AOP. The whey left over from production, which is considered as a by-product, is used in the dairy’s own pigsty as feed. All production at the Matten cheese dairy is highly ecological.
