Sbrinz AOP
AOP-IGP in a nutshell
Products bearing the label AOP (Appellation d’origine protégée) are traditional specialties with a strong connection to their area of origin. They have been produced for generations with heart and soul by cheesemakers, bakers, butchers and distillers. For AOP products, the raw materials and processing up to the end product are all tied to a clearly defined area of origin. AOP is a quality label that is protected under Swiss law. After registration with the Federal Office of Agriculture, the protected designations may only be used for products which meet the origin, procedural and quality requirements. Compliance is monitored by independent certification bodies.
