For 30 years, Andreas “Res” Gut has farmed the 11-hectare alp located 1400 metres above sea level at the Ächerli Pass, on the boundary between Obwalden and Nidwalden. During the summer, he himself looks after 27 cows belonging to five farmers. He processes their milk along with that of eight additional neighbouring alps with some 150 cows, for a total of 250,000 kilos every summer, in his own cheese dairy. Sbrinz accounts for about half of his annual production volume of some 20 tonnes of alp cheese. As far as quality is concerned, Sbrinz Käse GmbH has voted him Best Alpine Sbrinz Cheesemaker on several occasions.
