Sbrinz AOP nuggets with salad
For 4 persons
PREPARATION: approx. 45 minutes
Ingredients for the dressing:
– 6 tbsp rapeseed oil
– 3 tbsp. raspberry vinegar
– 2 tsp coarse mustard
– 1 tsp maple syrup
– 1 shallot
– Salt & pepper
Ingredients nuggets and salad:
– 200 g Sbrinz AOP, grated
– Pepper
– 2 egg whites
– Sunflower oil
– 250 g lettuce
– 100 g raspberries
Preparation:
For the dressing, mix the rapeseed oil, raspberry vinegar, mustard and maple syrup well. Finely chop the shallot and add. Season the dressing with salt and pepper.
For the nuggets, season the grated Sbrinz AOP with pepper, add the egg white and mix.
Form oval nuggets with two tablespoons. Fry the nuggets in portions in sunflower oil heated to 180°C for 2-3 minutes until golden. Remove and drain on paper towel.
Mix the lettuce with the dressing and arrange on plates. Arrange the raspberries on top. Serve the nuggets with the salad.
