Zander with Sbrinz and parsley crust
Serves 4
PREPARATION: about 15 mins
COOKING TIME: about 20 mins
Ingredients
– 2 large zander fillets, about 250 g each
– 1 tbsp lemon juice
– Salt, pepper
– Purslane for sprinkling
– Baking paper for baking sheet
CRUST
– 125 g Sbrinz AOP, grated
– 1 chopped garlic clove
– 1 organic lemon, slightly grated peel
– 4 tbsp parsley, chopped
– 60–75 g melted butter
Preparation
CRUST
Mix all ingredients together. The mixture should hold together.
Sprinkle zander filets with lemon juice, season and place on prepared baking sheet. Spread with mixture.
Cook for 15–18 mins in the middle of an oven preheated to 220°C. Sprinkle with purslane.
Tip: Goes well with steamed kohlrabi or a bunch of carrots.
