Wild garlic omelette

Wild garlic omelette

For 4 persons
PREPARATION: 45 mins

Ingredients
– 200 g flour
– 4 eggs
– 2 dl milk
– 2 dl water
– Salt
– Pepper
– Nutmeg
– 50 g butter
– Freshly shaved Sbrinz AOP to taste

FILLING
– 100 g wild garlic pesto
– 200 g cream cheese
– 100 g grated Sbrinz AOP

Preparation
Pour flour into a bowl. Add salt. Mix eggs, milk, water and spices well. Stir the flour into the liquid from the centre. Let stand at room temperature for about 30 minutes. Mix the wild garlic pesto well with the cream cheese and grated Sbrinz. Melt a little butter in the frying pan. Pour the mixture into the pan with a ladle and allow it to spread evenly. Cook omelette until golden brown on one side, turn over and spread with filling. Roll up and garnish with shaved Sbrinz and wild garlic pesto.
