Spelt risotto with winter spinach

Serves 4
PREPARATION: about 10 mins
SIMMERING TIME: about 30 mins

Ingredients
– 1 leek, cut into thin strips
– 2 finely chopped garlic cloves
– 1 tbsp butter
– 250 g spelt grains
– 2 dl white wine
– 4 dl vegetable stock
– 200 g winter spinach, cut into strips
– 1 tbsp lemon juice
– 100 g grated cheese, Sbrinz AOP
– Salt, pepper to taste

Preparation
Sauté leek and garlic in warm butter. Add spelt grains, steam. Add wine and bring to a boil. Pour in stock and let simmer for around 30 mins.
Add spinach 5 mins before the end, together with lemon juice. Add half of the cheese and season. Serve with the rest of the cheese.
