Spaghetti with tomato sauce

For 4 persons
PREPARATION: 30 mins

Ingredients
– 500 g spaghetti
– 500 g peeled tomatoes (tin)
– 1 garlic clove
– 1 onion
– 1 tsp salt
– 1/2 tsp pepper
– 1 pinch chilli flakes
– 2 sprigs thyme
– 1/2 bunch basil
– 100 g grated Sbrinz AOP
– Olive oil

Preparation
Peel and finely chop the garlic clove and onion. Add olive oil to a hot pan, sweat onion, garlic and chilli flakes over medium heat for 3-5 minutes. Add the pulp of the tinned tomatoes, stir in and sweat for another 5 minutes until the tomatoes have broken down.  Season with salt and pepper. Pluck the basil, keep a few leaves for decoration and chop the stems. Add the basil and plucked thyme to the sauce and bring to the boil.  Simmer over low heat, stirring occasionally and seasoning the sauce to taste.

Bring 5 litres of water to the boil and add a little salt. Add the spaghetti to the boiling water and cook for about one minute less than indicated on the packet. Then add to the sauce while still dripping wet and mix well. If necessary, dilute with pasta water. Optionally, stir in a little butter. Serve garnished with Sbrinz grated cheese and basil leaves.
