Pasta bake
Bernadette Odermatt, Obbürgen NW – Swiss Tavolata
For 4 persons
PREPARATION: approx. 40 minutes
BAKING: approx. 30 minutes
Pasta:
– 300 g fine pasta nests (Chinese noodles)
– 12 dried tomatoes preserved in oil, cut in strips, 3 tbsp of oil set aside
– 300 g pumpkin, diced
– 2 small leek stems, in rings
– 3 carrots, diced
Filling:
– 600 ml vegetable stock
– 600 ml double cream
– 120 g Sbrinz AOP, grated
– Salt, pepper
Preparation:
Spread pasta nests and tomatoes in a greased gratin dish. Heat oil in a pan, sweat squash, leeks and carrots for approx. 5 minutes, pour over pasta.
Filling:
Mix all ingredients together and pour over pasta.
Baking:
Approx. 30 minutes in the middle of an oven preheated to 200 °C.
Tip: Depending on the season, replace pumpkin with courgettes, chilli peppers or aubergines.
