Chicken Piccata milanese with green asparagus

For 4 persons
PREPARATION: approx. 40 minutes

Ingredients:
– 750 g green asparagus
– 2 cloves of garlic
– 2 tablespoons white balsamic vinegar
– 4 chicken breasts
– 3 tbsp flour
– 1 egg
– 2 tbsp milk
– 70 g Sbrinz AOP, grated
– 2 tbsp frying butter
– Salt & pepper
– 2 tbsp peppermint
– Tomato sauce (optional)

Preparation:
Cut the green asparagus diagonally into 5 cm long pieces. Heat the butter in a frying pan, fry the asparagus for approx. 5 minutes, season with salt and pepper. Finely chop the garlic cloves, add to the asparagus with the white balsamic vinegar, cover and keep warm. 

Flatten the chicken breasts a little, season with salt and pepper. Put the flour on a plate. Mix the egg, milk and grated Sbrinz AOP in a deep dish. Dredge the chicken breasts in the flour, one portion at a time, tap off the excess flour, then turn in the egg and cheese mixture. Fry the chicken in hot butter over medium heat for about 4 minutes on both sides. 

Arrange the asparagus and chicken breasts on plates, finely chop the mint and sprinkle over the asparagus. 

Tip:
Serve with a light tomato sauce.
