Wild garlic party bread rolls

 For 1 piece (about 20 rolls)
PREPARATION: about 45 mins
RISING TIME: about 1½ hours
BAKING TIME: about 25 mins

Ingredients
– 1 ovenproof cast-iron skillet or
– 1 26–28 cm wide baking sheet

DOUGH
– 300 g white flour
– 100 g spelt wholemeal
– 1¼ tsp salt
– 15 g yeast, crumbled
– 2.25–2.5 dl milk water (half milk, half water), lukewarm
– 100 g melted butter
– 1 bunch wild garlic, around 20 ca. 20 leaves, very finely chopped
– 60 g Sbrinz AOP, grated

Preparation
DOUGH
Mix flour and salt together and form a hollow. Dissolve yeast in a bit of milk water, and pour into hollow with the rest of the milk water. Knead into a smooth dough. Cover and let rise at room temperature until dough has doubled in size.


Mix wild garlic and half of the cheese together. Roll dough into about 20 equal sized balls. Roll in wild garlic butter and place about 2–3 mm apart in the preheated pan/on the preheated sheet. Cover once again and let rise 15–20 mins. Sprinkle with the rest of the cheese.
Bake 20–25 mins in the lower part of an oven preheated to 200°C. Serve warm.
