Spinach balls

For 50–60 pcs
PREPARATION: about 35 mins
COOKING TIME: about 25 mins

Ingredients
– About 600 g frozen leaf spinach, thawed, well squeezed (about 300 g)
– 1 large onion, very finely chopped
– 1 pressed garlic clove
– 6 eggs
– 100 g fresh breadcrumbs, handmade or from Beck
– 100 g flour
– 125 g melted butter
– 120 g Sbrinz AOP, grated
– Salt, pepper, nutmeg

– 1–2 whisked eggs, for brushing
– Baking paper for the baking tray

Preparation
Mix all ingredients up to cheese then add cheese, season.
Shape balls about 3.5 cm in diameter by hand, place on prepared baking sheet and brush with egg.
Cook 20–25 mins in a convection oven preheated to 170°C. Serve warm.
