Together with his wife Martina, Martin Flüeler, who has run the cheese dairy since 2010, is a fourth-generation cheesemaker. Cheese is made from the milk supplied by 10 conventional milk producers in the immediate vicinity and, just recently, also from eight organic farmers situated in the community of Kerns. Martin views direct contact with milk suppliers as highly valuable. In his view, it is also an advantage for ensuring quality assurance of milk in commercial cheese dairies. Martin Flüeler does his utmost to produce cheese of outstanding quality. He has set himself the goal of bringing his Sbrinz cheese dairy right up to the top.
