Sbrinz rolls with Ribelmais (rib corn)

PREPARATION: about 15 mins
SOAKING TIME: about 3 hrs
Ingredients
– 1.8 dl milk water (half milk, half water)
– ¾ tbsp salt
– 150 g Rheintaler Ribel AOP
– 2 tbsp butter
– Salt, pepper
– 4 tbsp chopped parsley
– 1 tbsp apple vinegar
– 3 tbsp cold-pressed rapeseed oil
– 1 chicory, cut into strips
– 3–4 radishes cut into wedges
– 100 g Sbrinz AOP, in rolls
Preparation
Bring milk water with salt to the boil. Pour over ribelmais, mix, and let soak at least 3 hrs.
Fry ribelmais for about 10 mins on medium heat, turning frequently, until crisp, then season. Stir in parsley.
Mix vinegar and oil. Add chicory and radishes. Dress with ribelmais and lettuce, and place on Sbrinz rolls.
