Kohlrabi Schnitzel with tomato sauce

Ingredients
SAUCE
– ½ tbsp butter
– 1 clove of garlic, pressed
– 1 can chopped tomatoes, approx. 400 g
– 1 bay leaf
– ½ tsp sugar
– ½ tsp salt
– A little pepper
KOHLRABI SCHNITZEL
– 3 small kohlrabi, approx. 280 g each
– ¾ tsp salt
– A little pepper
– 2 tbsp. flour
– 3 eggs
– 60 g grated Sbrinz AOP
– 3 tbsp milk
– ¼ tsp salt
– 1 tbsp frying butter
– A bit of chives, finely chopped
Preparation
SAUCE
Heat the butter. Sauté the garlic. Add the tomatoes, season, simmer half covered for 20-30 minutes, season.
SCHNITZEL
Cut kohlrabi into slices approx. 1 cm thick, simmer in boiling water for 3–5 minutes. Drain kohlrabi well, season. Put the flour in a deep dish. Likewise whisk the eggs in a deep dish. Add the Sbrinz and milk, mix well, season to taste. Dredge the kohlrabi slices first in the flour, then in the egg and cheese mixture. Heat the butter in a coated frying pan. Fry the kohlrabi schnitzel in portions over a medium heat for 3–5 minutes on both sides, arrange and sprinkle with chives. Serve with sauce.
Tip
Goes very well with pasta.
