Green bowl

Serves 4
PREPARATION: about 30 mins

Ingredients
LENTILS
– 200 g green lentils
– 400 g fresh peas, shelled
– 3 tbsp white wine vinegar
– 2 tbsp rapeseed oil
– ½ bunch mixed herbs, e.g.
– peppermint, dill, basil, parsley, chives, finely chopped
– 1 tsp salt
– Bit of pepper

BOWL
– 1 thinly sliced onion
– 1 tbsp butter
– 200 g green beans
– 1 dl white wine
– Salt, pepper
– 200 g snow peas
– 100 g Sbrinz AOP, in chunks
– 50 g young spinach

Preparation
LENTILS
Cook for about 25 mins in boiling water until soft, pour off water and let drain. While still warm, mix together with peas and all ingredients up to pepper, then add pepper.

BOWL
Sweat onion in warm butter, add beans and cook together for 4–5 mins, add wine, cover and cook for 8–12 mins until soft, season and remove.
Fry snow peas in same skillet until crispy and season.

FINISHING
Arrange lentils in bowls, top with beans and snow peas, and dress with Sbrinz and spinach.
